Pink Banana was tasty and sweet, though I agree with Amy Goldman that it’s not as glorious as its sibling, Blue Banana. I found it at the Vancouver Farmer’s Market the same day I got the Long Island Cheese. The texture is smooth and potato-y, which I am into. It’s similar to a good butternut in texture and flavour, and sweet enough that you could use it for a dessert, but flavourful enough to stand on its own for dinner, or take on a savoury dressing. Thin edible skin, huge seeds perfect for eating. Thumbs up.
